Crown Maple and The Valley Table magazine have announced the Crown Maple Chef’s Challenge that will take place during the upcoming Hudson Valley Restaurant Week, March 18-31. Chefs from all 200 participating restaurants are eligible to enter by creating an appetizer, entree, dessert or cocktail recipe using Crown Maple syrup as a key ingredient and featuring the item on their Restaurant Week menus.

Recipes will be judged by a panel of chefs, and one winner chosen for each of the four categories. Diners will have the opportunity to cast votes for their favorite dishes as well.

“The Crown Maple Chef’s Challenge adds a wonderful new dimension to Restaurant Week for diners and chefs alike,” says Janet Crawshaw, event organizer. “Chefs are challenged to use maple syrup in new and exciting ways — and diners get to taste the results of their creativity.”

Some of the delic ious offerings in store for diners include: an appetizer of Crown maple glazed smoked pork belly with corn polenta and micro mustard greens; a pan-seared salmon entre with Crown Maple citronette. For dessert, how about Crown Maple spice cake served with Bourbon-Mascarpone cream, apple-fig compote and salted caramel sauce? And for a night cap, sip on a Mack & Jack cocktail made of Hudson 4-Grain bourbon and Crown Maple Syrup, infused with fresh sage and orange zest.

May the best recipes win.
